Apologies to partner

The first hand (5) where I said I would apologise was

Partner's hand (5-4 or so in Hearts and a Minor), brought forth the comment, on passing) that I would apologise if his suit was Clubs.

Naturally it was, so I did: 11 tricks rolled in - any ideas how the hand would be bid, the only forcing option below game we have would be 2NT asking for a minor and then bidding 3 (invitational) (Partner held K53 QJ987 8 K984)

Once I apologised we moved on (hand 6):

Again I apologised in advance saying that the hand might make anything from 8 - 12 tricks and I did not know how to bid it. (Partner ruffed the A lead)

Again - Suggestions how do you bid large hands when partner pre-empts? (Assume partner, unlike me, isn't too adventurous)
