Do they always pitch first from their 5 card suit?

Playing in a top flight (don't go there) regional KO. My opponents are two pros. LHO is known to me and RHO a younger foreigner I did not know.

You and your partner with no opposing bidding arrive in 6H by South. North showed a singleton spade, 3 keycards and six plus hearts.

LHO leads the SA (A from AK) and, after a middle spade, switches to a small heart. You win the HA in dummy. RHO plays the HT,  on the HK pitches the smallest outstanding diamond,  and on the third heart plays a spade.

I woodenly hooked the DT when the double squeeze operated. RHO was 4=1=5=3 with J9xxx of diamonds and Qxx of clubs. LHO did have the SK.
