How do you play trumps?

Qualifying session of the Wernher Pairs against unknown opponents. You find your way into 7 after this auction:

X = support (3 spades)*

3H = general forcing bid, undiscussed

4C (after 3N) = optional RKC

4S = I like my hand for slam and have 3 keycards

 

*I found out after the hand that partner was not sure the double was support

 

 Obviously 7 is the better contract both from playability and also MP score, but that's not the contract you're in.  The lead is J. You run it around to the A and play A. It goes small, small, J. 

 

How do you play trumps from here? Please comment with thoughts - I'd especially appreciate any breakdowns of what the percentage play *should* be after the opponents' interference.
